Peachy galette

I’m not the most organised of cooks. I often get a sweet craving come over me and I’ll be tempted to make a dessert, but will have to improvise with what I have in the cupboard or fridge.

Our restricted storage capacity in the caravan fridge is probably what’s keeping me alive and avoiding a massively early death through my over-consumption of sweet things.

Because if I had all possible ingredients to hand I’d probably make a dessert every evening. Which is not good. Note to self: the pantry you’re building may not be such a good idea for the remains of your waistline… Fill it with beans and pickles, woman, if you value your life…

As the clock ticked around to about 4pm today I started thinking about supper, and I really fancied something sweet.

I found a punnet of rather hard peaches and a roll of ready made puff pastry lurking in a dark recess of the fridge. They were behind the bags of kale and chard, which glowed with health and reproachment. I also just happened to have a tub of mascarpone left over from some previous excess. I could make a peach galette!

In the UK, and especially here in Scotland, we don’t have the tradition of peach pies that I often see in the United States. Peaches are a rather exotic, imported fruit here (which I am determined to grow in my polytunnel one day. We must be independent in good fruit. But I digress).

A galette is a rather pretentious name for a slab of pastry, crimped up around the edges of creamy mascarpone egg custard and a pile of sugared, sliced peaches. It sounds so much more exotic than it actually is. It’s raggedy and rustic and delicious.

I couldn’t be bothered with forming a proper pie today anyway. Rough edges and random piles of fruit seemed like a perfect idea. I can do piling and sugaring, I thought.

And so I did. And so we followed a healthy stir fry with a crusty, cinnamon scented, custardy, sweet peach galette.

It gladdened the heart. Which compensates for the expansion of the waistline, I’m almost sure…

Grasses Galore

We’ve had a warm, breezy day on the croft today. Twenty-two degrees and a clear blue sky. It made our outdoor tasks today so much easier with the wind keeping the midges at bay.

The grass has grown so much over the last few months that the paths that husband had scythed in the spring had nearly disappeared.

This was making trips to the raised beds and the compost heap a daily waist-high challenge.

I wouldn’t normally worry about wading through long grass, but I’m super cautious about picking up ticks and horsefly bites at the moment, and didn’t want to have to start walking about swathed in protective netting like some sort of veiled ninja..

So husband spent a few hours yesterday and today scything swathes through the grass and collecting it up for compost. The breeze helped what was a long, sticky endeavour.

Some folk like to cut their grass neatly and very regularly. We have chosen to leave ours wild, and to see what comes up. We prefer it that way, and nature seems to agree.

We’ve found orchids, clover and wild flowers in abundance, and there are certainly plenty of moths, bees, butterflies and insects. Husband has even had to rescue a few small frogs from the path of his scythe…we want to encourage them as much as we can. Natural slug protection!

Once we have an agricultural shed to store equipment in we will need to look at other ways to manage this, though. Even with trees, six acres is too much to manage by hand with a scythe. It’s a fine line between managed meadow and bracken and bramble patches overtaking the land.

We’re thinking at least one annual cut after the summer is over to help seed and keep the rushes down.

For now we’ll enjoy the grasses and the wild flowers from our small, scythed tunnels through the abundance.

Summer eating

This is the season for eating from the croft, and the fresh produce is now coming in with abundance, even from the handful of small grow beds that we have. We are enjoying lettuce, kale, new potatoes, purple sprouting broccoli, chard, onions, peas and fresh herbs.

I’m being challenged to find new ways of serving this bounty, as we can’t store or freeze any produce this season.

This is whipped feta with roasted beetroot, toasted almonds, orange zest, chopped mint and parsley.

I was so excited to try our first baby beets from the croft that I made this dish up specifically to try them. It’s adapted from one that I found that uses goats cheese.

Scooped up with oat biscuits, it was a light nibble to eat before a main meal with friends, but would easily make a lunch on its own. This will become a summer staple, I think, and I’ve resolved to definitely grow more beetroots next year!

Tonight, kale and purple sprouting broccoli from the croft were the central vegetables in our meal. They were lightly sautéed with garlic, sesame, spring onions, lime, a bit of leftover chicken, and noodles.

House build update

I can hardly believe that we’re in July already, but that seems to be where we find ourselves. The house build progress has been slow, but at last we are through the bulk of the sealing, taping, foiling and re-taping of the house walls and have moved into the next stage. Thank the stars that my husband doesn’t give up easily through what has been a marathon of a process.

He has been laying the insulation slabs on the internal floors in this past week in preparation for the underfloor heating pipes to go down. Then it will be the screed pouring before finally we have a level, warm floor for the house!

We have the plasterers booked in for September, so we need to complete the floors and basic pipe and wiring installation in the next two months to make sure that we secure their time. I know how quickly eight weeks will go, so it will be another busy time.

In parallel, I’m re-examining all the kitchen and bathroom material choices we made over a year ago. Prices and suppliers have all changed, and we need to get selections finalised and fresh estimates in so that we can secure fittings when we’re ready.

We’ve also sourced an excellent local lady joiner to make us custom built wardrobes and bookcases for the main bedroom, hall and sitting room areas at the end of the year. Hugh could build them, but having done everything else by then I suspect he will be on his knees. And the quality of her finished work looks excellent.

I’m especially excited by the prospect of the extremely high bookcase taking up the whole of the back wall in the sitting room. We’ll need a ladder to gain access to the upper shelves! But it will take a huge quantity of books. Just what we need.

Onward and upwards! We will get there.

Buttercups and Beetles

What a glorious day. The croft is bursting with weeds (aka wildflowers) and we love it. We have buttercups growing in thick profusion next to the vegetable area, and it’s just so beautiful.

I couldn’t help have a bit of an ironic chuckle to myself today too. About two years ago we sowed pignut and bluebell seeds in the little copse on the western boundary before we moved onto the croft.

Now that we live here, we can see that we have a profusion of both popping up all over the croft. There was no need to sow them – they’re growing everywhere here naturally. The impatience and innocence of townies. All we had to do was wait and watch…

This is a beautiful time of the year here on the croft. Everything is in bloom, and the insects (sadly including the midges) are everywhere. It’s a price we’re prepared to pay. Anyway, we’ve got hats and nets…

We wake up each morning to the cuckoo, the skylarks and the swallows wheeling overhead.

I’d got so used to hardly ever seeing insects in the city that it’s been a bit of a shock to find ourselves cohabiting with so many at such close quarters. Weevils, oil beetles, lacewings, strange, alien looking creatures that we don’t know are friend or foe, but which have at least as much right to be here as us.

Google lens and plant apps are being used daily. This is richly diverse meadow and moorland, and we’re loving learning about it.

The house build continues apace, with plasters and plumbers being lined up to help over the coming months, but it’s very hard not to get seduced into just being on the croft.

It’s been a very cold spring so far.

We continue to have frosty mornings and very cold nights, so it’s not been advisable to put out any tender plants without serious fleecing.

My “plant room” in the caravan is still full, and although I’ve planted out a few purple spouting broccoli and beetroot plants, some cabbage, kale, and some sorrel, everything else is under wraps for a bit longer. I’ve direct sown carrots and parsnips into the beds but nothing has germinated yet…. I don’t blame it.

It did give us the opportunity to make another hugelkutur bed with cut reeds as the base, as I’ve estimated that I’ve still grown too much to fit into our prepared growing space. Always a learning, eh?

Everything is heavily mulched with woodchip to try and minimise soil runoff. We’ve almost gotten through a few tonne bags of that already, and I’ve still got the paths around the beds to lay..

Herbage and Seeds

The urge to grow new things is very strong. We have no greenhouse or polytunnel yet, so I’ve set up a small space in one of the rooms in the caravan to start my seeds off. Luckily this room still has the old carpet down so it doesn’t matter if it gets grubby.

Balanced somewhat precariously on old cardboard boxes and a heat mat, and wedged between boxes of spare clothes and the hoover, are my first trays of seedlings. The blue wands of wonder are moved around to those plants that seem to need them most. It’s not exactly a professional set up, but it will do!

I’ve tried to choose plant varieties carefully to ensure that they’re hardy for our exposed site, but this first year is going to be very much an experiment.

I know that I’ve probably started too early for these northern altitudes, but I was itching to start. If they get too leggy I’ll just have to re-sow.

I have garlic ready to plant out. We eat lots of that, and I have more to plant directly into the soil once the beds are ready.

I have seed potatoes chitting ready for planting in the coming weeks. A local crofter recommended two varieties that I’m going to be trying, with good flavour but also good blight resistance.

I also have beetroot, chard, leeks, sorrel, parsley (it germinated! Hallelujah!) and Sutherland kale sown and just starting to grow.

Husband has been working on the construction for our compost bays too, which we need to start as soon as possible. The price of good compost in the quantities we will need is eye-watering, and I’d much rather we made our own.

I’ve also just finished reading this book. A total inspiration, a really interesting story and full of very practical advice about growing abundantly, organically and using no-dig principals. It’s just come out, so do source a copy if you get the chance.

Eerie Blue Light

The days are getting longer. Although we are still in the clutch of a cold winter here on the croft, with snow still on the hills and an icy wind, my thoughts have increasingly moved to garden planning as our daylight hours have lengthened.

I’ve started some seeds off in the little bedroom in the caravan. We have no greenhouse, cold frames or polytunnel yet, so needs must.

It’s a bit of a make-do affair with a propagator heat pad, some cardboard boxes, seed trays, old yoghurt pots that I’ve been saving since we moved here, and one of those whizzy octopus UV grow lights to help start things off.

Everything is bathed in an eerie blue light from its flexible metal arms. It’s like something from the X Files… I go in a few times each day to check on things and can’t resist adjusting it.

Lord only knows what the neighbours must think when they see the strange, neon blue light glowing through the thin curtains at dusk…

I’m starting small. More will follow in March and April, which is a much more sensible time to start new plants here.

I’ve started garlic, onions (although the recommended local wisdom is to grow from sets rather than seed, which I only discovered after I’d bought them), leeks, parsley, beets and rocket. Seed potatoes are on their way in the next week ready for chitting.

I know it’s early, but it’s such a short season that it makes sense (to me at least) to have plants ready to be planted out in May, and they’ll need a full month of hardening off, I suspect.

The garlic has leaped into action almost immediately. I’m growing a rose and a white skinned garlic, both hardy varieties, and both a bit of an experiment, although local growers report that they generally grow well here.

I’ve been keeping my eyes peeled for old glass windows or sheets of polycarbonate on the local ads to make cold frames, but they’re scarcer than hens teeth at this time of the year, so we may need to buy materials new and create our own.

And so it begins.

Snowy days and wall foil

It snowed again overnight. We awoke to brilliant white, and the strange, blanketing silence that a covering of snow brings to the world.

Silence that is, apart from the raven, who called loudly from the old pine as the sun came up.

Husband managed to get out to insulate the water pipes yesterday, just in the nick of time. We had running water this morning for coffee, despite the overnight temperatures.

We’re cracking on with the interior wall foiling now, fuelled by hot coffee and egg butties.

Even though the house is a shell without insulated flooring or plasterboard yet, the solar gain from the big, south facing windows, coupled with a small 3kw heater is maintaining a temperature of about 13 degrees centigrade.

Which considering the temperature outside, and the volume of air to heat in this 200m2 space, is pretty good.

We think that this bodes well for when the house is fully insulated and sealed. It should be very energy efficient and cheap to heat.

Just what we need.

Festive thoughts from the croft

Like many people in these troubled times, Christmas for us this year will not be as it usually is.

Apart from the fact that we’ll be spending it in an ancient caravan perched on the side of a rain-swept hill, we will also not have the kids with us. It will just be husband and myself on the day.

We’re conscious that they are many others who don’t have a roof over their heads, good health, or enough to eat this Christmas. We’re very blessed that we don’t fall into any of these categories.

We will be together. We’ll be warm and dry with enough to eat. Our loved ones are safe, and we’ll be able to share calls with them on the day.

The house build is progressing, albeit slowly, and stands there, a promise to come and the culmination of many years of planning and hard work. We awake to this promise, along with some incredible sunrises, every day.

During the bizarre awfulness which 2020 has been, I count this all as success.
